Ingredients

  • 2-1/2 cups - Wheat flour
  • salt
  • thin buttermilk or water

How to Make Phulka

  • Knead the ingredients into a soft dough
  • Divide into ping pong-sized balls (or even smaller).
  • Roll out into thin circles. Roll as thin as possible (about 2 mm thick).
  • Heat griddle (tawa) and place phulka on it.
  • When dry on one side, flip. When brown spots appear on second side, flip again.
  • Use a kitchen towel and lightly press down on the phulka, rotating it at the same time. This will help it puff up. Make it as crisp as desired.
  • Apply ghee on the crisp side and serve hot.
  • Serve hot with vegetable curry.
