Ingredients

  • pineapple - 1 large
  • dried apricots - 100 gm
  • jaggery or soft brown sugar - 1/3 cup
  • cinnamon powder - 1/2 tsp
  • dry ginger powder - 1/2 tsp
  • bananas - 2 cups, sliced
  • lime juice - 1 tbsp
  • mint leaves to garnish

How to Make Pineapple and Bananas In Apricot Sauce

  • Peel, core and cut pineapple into pieces.
  • Soak apricots in 1 cup of water for 1 hr.
  • Remove the seeds, return the apricots to the water in which they were soaked.
  • Simmer on a low flame till soft.
  • Dissolve brown sugar or jaggery in 1/2 cup of water and add to the apricots.
  • Simmer for 10 minutes. Cool and blend in a mixer. Add cinnamon and ginger powder.
  • Mix the apricot sauce with pineapple pieces. Refrigerate at least for 6 hrs, overnight if possible.
  • About 1-2 hrs before serving, slice the bananas, toss in lime juice and add to the pineapple mixture.
  • Serve chilled, decorate with mint leaves.
