Ingredients

  • Pineapple - 1, medium sized, not fully ripe
  • Cashew nuts - 3 tbsp
  • Almonds - 2 tbsp
  • Melon seeds - 2 tbsp
  • Ginger - 1 tsp, chopped
  • Green chillies - 3
  • Coriander powder - 1 tsp
  • Cinnamon - 2" piece
  • Nutmeg - 1 small piece
  • Ghee or oil - 2 tbsp
  • Raisins - 1 tbsp
  • Red chillies - 2, broken into halves
  • Fresh cream - 1/2 cup
  • Salt to taste

How to Make Pineapple Curry With Nuts And Raisins

  • Peel the pineapple and cut into small pieces.
  • Split cashew nuts into halves.
  • Blanch and peel the almonds.
  • Grind half of the cashew nuts with half the almonds, melon seeds, ginger, green and red chillies and coriander powder to a fine paste.
  • Slice the remaining almonds.
  • Crush cinnamon and nutmeg together to a coarse powder.
  • Heat ghee or oil. Add the remaining cashew nuts and sliced almonds.
  • When they are light brown, add broken chillies and raisins.
  • When the raisins puff, add the ground paste and powdered spices. Fry till fragrant.
  • Add pineapple pieces, salt and 1 cup of water.
  • Cover and simmer till pineapple is soft.
  • Stir in the cream and remove from fire.
  • Serve hot with rotis.
