  • 2 cups - ripe Pineapples (cubed)
  • 2 tbsp - grated Coconut
  • 1 tsp - Jaggery
  • Salt
  • Oil
  • To roast:
  • 1 tbsp - Urad Dal
  • 1 tbsp - sesame seeds
  • 8 - Fenugreek seeds
  • Few Curry leaves
  • 1 inch Tamarind piece
  • 6 - dry Red Chillies
  • Oil
  • How to Make Pineapple Gojju:

    1. Heat oil in a pan, roast all the ingredients given under the list 'to roast' until a nice aroma comes out, keep aside and let them cool completely.
    2. Now grind the roasted spices and coconut together with enough water as smooth paste.
    3. Heat enough oil in a kadai, fry the curry leaves and ground masala for few seconds, add enough water to adjust the consistency of the gojju, now add the jaggery, salt and bring it to boil.
    4. Finally add the pineapple pieces and let it boil for few minutes, turn off the stove.
    5. Let this gojju stand for an hour before serving.
    6. Serve this gojju with rotis or rice.
