  • For the dough:
  • 3 cups - flour
  • 1.5 tsp - Dry yeast
  • 1.5 tsp -salt
  • 2 tbsp - Sugar
  • 1/2 cup -lukewarm water
  • 2 - eggs (1 Egg + 1 Egg white. Keep the yolk for Egg wash)
  • 1/2 cup - lukewarm Milk
  • 1/4 cup - oil
  • For the filling:
  • 3 - potatoes, boiled and mashed
  • 2 - chopped Onions
  • 1 cup - chicken, boiled and shredded
  • 1 tbsp - ginger, finely chopped
  • 1 tbsp - garlic, finely chopped
  • 1 tbsp - coriander leaves, finely chopped
  • 1/2 tbsp - Mint leaves, finely chopped
  • 1/2 tbsp - coriander powder
  • 1 tsp - chilli powder
  • 1 tsp -garam masala powder
  • 1 tbsp -tomato sauce
  • How to Make Pirozhki or Stuffed Buns:

    1. Take the yeast in a bowl, along with 1 tsp of sugar. Add lukewarm water and keep aside, for about 5 minutes, till it becomes frothy and rises.
    2. In another bowl, take rest of the ingredients and yeast. Mix well, till you get a ball.
    3. Tip onto a floured surface and knead, till you get a smooth and elastic dough.
    4. Return to a bowl, cover with a damp cloth and keep in a warm place, till it doubles up in volume.
    5. Meanwhile, heat 2 tbsps of oil in a pan and saute the onions, till they turn pink in colour.
    6. Add the chopped ginger and garlic. Stir for a minute.
    7. Add the coriander and chilli powder. Stir for a minute.
    8. Add the chicken, potatoes and mix well.
    9. After a minute, add the garam masala powder, chopped leaves and mix well.
    10. Finally, add the tomato sauce and mix well.
    11. Switch off the heat and let the mixture cool.
    12. Flatten the dough, with your hand and knead for a minute. If it is sticky, take a bit of oil in your hand and knead.
    13. Form small balls and flatten them using a rolling pin or with your hand and place some filling. Lift the edges, bring towards the centre and seal them. Form into a desired shape.
    14. Place these on a greased tray. Keep aside for 15 minutes.
    15. Meanwhile, preheat the oven to 180 degree C. Brush the buns with egg yolk.
    16. Bake the buns, for about 20 minutes or, till they turn golden brown.
