  • 100 gms - Egg white
  • 200 gms - confectioner`s Sugar
  • 100 gms - Pistachio powder
  • 1-2 drops Pistachio food colour (optional)
  • For the Strawberry cream:
  • 30 gms - Strawberry sauce
  • 50 gms - whipped Cream
  • 50 gms. berry compote
  • How to Make Pistachio meringue and berry stack:

    1. Beat egg whites and sugar together till stiff.
    2. Fold in the pistachio together till stiff. Fold in the pistachio food colour (optional).
    3. Pipe small discs of the above mixture on oil paper and bake them at 160 degree C in a pre-heated oven for 3-4 mins. Cool.
    4. Make strawberry cream by mixing strawberry sauce and whipped cream.
    5. On the baked discs, add strawberry cream and then some berry compote on top.
    6. Repeat the process to form a stack. Serve.
