  • 3 - heaped cups plain flour.
  • 1 tsp - castor sugar.
  • 2 cups or less - tepid water.
  • 2 tbsp - Olive oil.
  • 1 packet - active dried yeast.
  • How to Make Pita Bread:

    1. Mix sugar and water. Sprinkle yeast over it.
    2. Cover and keep for 7-9 mins.
    3. Sieve flour to loosen.
    4. Add yeast solution to sieved flour. Knead to a soft lump.
    5. Transfer onto a floured working surface.
    6. Knead until smooth and elastic.
    7. Either knead by hand or in a food processor.
    8. Place dough into a lightly dusted bowl.
    9. Cover with a moist cloth or cling film.
    10. Slip bowl into a clean polythene bag, twist mouth, keep aside.
    11. Allow dough to rise for 45 mins or till double in size.
    12. Punch to exude air, divide dough into 10-12 portions.
    13. Roll each portion into a thick round.
    14. Keep aside covered with a plastic sheet or moist cloth for 20 mins.
    15. Grease a large baking sheet or more than one as required.
    16. Preheat oven to 200C, brush breads with water or milk.
    17. Bake at 180-190 C for 9-10 mins till light golden.
    18. It is done when it feels light and hollow from inside.
    19. Cool on racks or serve warm as required.
