Ingredients

  • 2 - English muffins, split.
  • 50 ml (1/4 cup) - Tomato sauce.
  • 15 ml (1tbsp) - butter.
  • 125 ml (1/2 cup) - sliced mushrooms.
  • 75 ml (1/3 cup) - chopped sweet green pepper.
  • 4 - eggs.
  • 25 ml (2tbsp) - milk.
  • pinch each salt and pepper.
  • 50 ml (1/4 cup) - shredded mozzarella cheese.
  • How to Make Pizza Egg Melts:

    1. Under broiler or in toaster oven, toast muffins for about 1 minute or until golden.
    2. Spread each with 15 ml (1 tbsp) tomato sauce; set aside.
    3. In non-stick skillet, melt butter over medium heat.
    4. Cook mushrooms and green pepper, stirring occasionally, for about 5 minutes or until softened.
    5. In bowl, whisk together eggs, milk, salt and pepper until combined.
    6. Add to pan and cook, stirring with spatula to form large soft curds, for about 1 minute or until eggs are thickened and moist but no visible liquid remains.
    7. Spoon eggs over muffins.
    8. Sprinkle with mozzarella cheese; broil for about 1 minute or until cheese is melted.
