How to Make Plain Aloo Fry

  • Boil the potatoes in a cooker and keep it aside.
  • When the potatoes have cooled, remove the skin and cut them into cubes.
  • Heat oil in a pan and fry the potatoes in it.
  • Add turmeric powder, chilli powder, coriander powder and masala of your choice and stir well.
  • Add salt.
  • Sprinkle water and stir well.
  • When it becomes dry, add 2 tsp oil and fry again in a low flame.
  • In another small pan add oil and put the chillies in it.
  • Add the curry leaves and stir.
  • Add the seasoning to the aloo masala and remove from fire.
  • Aloo fry is ready.
  • Remove to a serving bowl and serve with chapattis or pulao.
  • Garnish with coriander leaves or cashews nuts.
