Ingredients

  • 1 cup - Channa dal
  • 1/2 tsp - citric acid
  • 1 tsp - crushed Ginger
  • 2 tsp - chopped Green chilli
  • 3/4 tsp - cooking soda
  • 1/2 tbsp - oil
  • 1 tsp - Mustard Seeds
  • 1 tsp - sesame seeds
  • 1/2 tsp - Asafoetida
  • 8 to 10 Curry leaves
  • 4 to 5 - long cut Green chillies
  • For garnishing: chopped coriander leaves, grated fresh Coconut
  • For chutney: 1/2 cup - crushed khaman
  • 1/4 cup - coriander
  • 3 - Green chilli
  • 1 tsp - Sugar
  • How to Make Plain Khaman:

    1. First of all, soak channa dal - gram dal for 5 -6 hours.
    2. After soaking, crush it and then add ½ tea spoon of citric acid to it.
    3. Mix well and keep a side for 5 hours again.
    4. After that, add salt, green chilli, ginger, citric acid and cooking soda to it.
    5. Mix properly.
    6. Pour the mixture in a greased plate and steam for 15 - 20 mins.
    7. Let it cool at room temperature.
    8. In another pan, heat oil and add mustard seeds.
    9. When it crackles remove from flame and add green chillies, curry leaves and asafoetida.
    10. Add ¼ cup water and spread over khaman.
    11. Garnish with coriander leaves and coconut.
