Ingredients

  • 1/2 kg - kovakai (aka tindora, dhondakai)
  • 1 - Potatoes
  • 5 pods - Garlic
  • 1/2 inch - Ginger
  • 1.5 tsp - chilli powder
  • 1.5 tsp - salt
  • 1/4 tsp - fennel seeds/cumin
  • 1/2 tsp - Haldi
  • 1/2 tsp - Mustard Seeds
  • 1-2 cups - oil

How to Make Plain Kovakai Masala

  • Heat the mustard and fennel seeds in oil.
  • Add mashed garlic and ginger to the mustard when it sputters.
  • Then, add haldi powder and chilli powder to it.
  • Slit the tindora vertically and cut the potato into cubes.
  • Fry potatoes in oil and then add tindora to it.
  • Add salt to taste.
  • Sprinkle water and put a lid on the vessel and allow it to cook for 6 minutes.
  • Remove lid and add 2 tsp of oil and mix well and fry it for 4-5 minutes.
