  • eggs - 2.
  • Onion, cut into very small pieces - 4 tbsps.
  • Chilli powder - 2 tsps.
  • Turmeric powder - 1/4 tsp.
  • oil - 1 tbsp.
  • Water - 2 cups.
  • Salt to taste.
  • Curry leaves.
  • How to Make Plain Poached Egg Curry:

    1. Heat a pan, preferably a shallow one and pour oil.
    2. Fry the finely chopped onions until brownish in colour.
    3. Add chilli powder, turmeric powder and curry leaves and stir it for another half a minute.
    4. Now pour 2 cups of water to this and boil.
    5. Add salt.
    6. Once the water boils, break eggs and gently place in the water. Let it cook for 5 to 6 mins.
    7. Now carefully turn the eggs so that it cooks evenly.
    8. After 2-3 mins cut the eggs into two and simmer for another 1 or 2 mins.
    9. Now your poached egg curry is ready. Serve with rice.
