Ingredients

  • 3/4 cup -Orzo
  • 2 cups - Chicken stock/broth
  • 6 - eggs
  • 1/3 cup - Ricotta cheese
  • 1/4 cup - Sour Cream
  • 1 cup -Chopped scallions for a mild Onion flavour
  • 1/4 cup - Chopped Parsley
  • 1/4 cup - Chopped roasted red peppers/capsicum
  • salt and pepper to taste
  • 2 cups - Chopped cooked Chicken breast (or sausage, roast meat, etc.)
  • How to Make Plain Shrimp fried rice and Sausage Frittata:

    1. Boil the stock and add orzo to it. Cook for 8 mins.
    2. Drain and let it cool.
    3. Beat the eggs and add the remaining ingredients.
    4. Add the cooled orzo and mix well.
    5. Pour the mixture into a baking dish.
    6. Bake at 375 deg for 25 mins.
    7. Then, broil for 5 mins to brown the top.
