  • Layer I.
  • 1 cup - all purpose flour (Maida).
  • 2 tbsp - sugar.
  • 1/2 tsp - salt.
  • 1/2 tsp - baking powder.
  • 1/2 cup (firm but not too hard) - butter.

  • 2 cup, halved and stoned - plums.
  • 4 tbsp - sugar.
  • 1/2 tsp - cinnamon powder.

  • 2 egg yolks.
  • 1/2 tsp - vanilla essence.
  • 1 cup - thick cream1 tbsp - sugar.

How to Make Plum and custard pudding

  • Preheat the oven to 200 C. Line the base and sides of a 8 and a half square cake pan with aluminium foil.
  • Mix together the flour, sugar, salt and baking powder. Cut the butter into small pieces and rub into the flour mixture till it is evenly distributed.
  • Sprinkle this mixture in the pan and press firmly to cover the base and half way up the sides of the pan.
  • Arrange the plum halves over the crumb mixture. Combine sugar and cinnamon (in layer
  • ) and sprinkle over the plums. Bake for 15 mins.
  • Beat the egg yolks with essence and sugar till smooth and light. Add the cream and pour over the plums.
  • Bake till the custard is set and the edges are light brown (25-30 mins).
  • Serve warm.
