  • 450 gms - plums.
  • 1/2 tsp - each ground Ginger and cinnamon.
  • 150 gms - flour.
  • 100 gms - light muscavado sugar.
  • 150 gms - ground almonds.
  • 200 gms - unsalted butter, chilled and diced.
  • 70 gms - chopped Walnuts or hazelnuts.
  • How to Make Plum Crumble:

    1. Halve and stone the fruit and pack it in a shallow baking dish, filling any large gaps with chopped plums.
    2. Sprinkle the spices over the top.
    3. If the plums are very tart, sprinkle 2-3 tbsp sugar over them.
    4. Mix the flour, sugar and ground almonds together in a large bowl.
    5. Rub in the butter with your fingertips and spread the mixture evenly over the fruit.
    6. Top with the chopped nuts. Just before baking, drizzle lightly over the top 2 tbsp cold water.
    7. Bake for 30-40 mins at 170 C until the top is golden brown.
