Ingredients

  • 1 tbsp - urad dal.
  • 3 tbsps - oil.
  • 30 to 35 - red chillies.
  • Salt to taste.
  • Asafoetida.
  • 1 bundle of coriander leaves.
  • Lime-sized ball of tamarind.

How to Make Podi (Dry chutneys)

  • Roast the urad dal till red in colour. Keep aside to cool.
  • In the same kadai, heat 1 tbsp oil and saute the red chillies.
  • When done, add the chillies to the urad dal.
  • Add salt and asafoetida to the urad dal-chillies mixture.
  • Mix well and grind.
  • Chop the coriander and dry well for about 20 mins.
  • Add this to the powdered dal-chillies mixture.
  • Take lime-sized ball of tamarind add to the coriander leaves. Mix well.
  • Dry grind everything and keep aside.
  • The heat 2 tbsps oil and mix with the ground powder.
  • Let it cool and seep in an airtight container.
