Ingredients

  • 250 g - Ash gourd/Poosanikai
  • 1/4 cup - Toor Dal
  • 1/4 cup - Channa dal
  • 1/2 tsp - Sambar powder
  • 1/4 tsp- Turmeric
  • 1 tsp - Coconut oil
  • 1/4 tsp - Mustard Seeds
  • 1/4 tsp - Asafoetida
  • A few Curry leaves
  • 2 tbsp - Coconut(Shredded)
  • Salt to taste
  • To Grind:
  • 1/2 tsp - Coriander seeds
  • 1/2 tsp - Channa dal
  • 3-4 - Red Chillies
  • 2-3 tbsp - Coconut.
  • How to Make Poosanikai ( Ash Gourd) kootu:

    1. Cut the poosanikai into big cubes and keep aside.
    2. Soak the toor dal and channa dal in water for 15 mins.
    3. Now combine the dal, the sambar powder, turmeric powder, salt, water and the poosanikai in a pressure cooker.
    4. Pressure cook till 2-3 whistles.
    5. Now dry roast the ingredients for grinding and then grind them into a smooth paste with a little water.
    6. Now dry roast the coconut in a pan.
    7. Then, add the cooked poosanikai and dal mixture, ground masala and 1/2 cup of water in a pan and cook to reach the kootu consistency.
    8. Boil for 2-3 minutes.
    9. Add the roasted coconut.
    10. Temper the mustard seeds and curry leaves in coconut oil and pour on the top.
    11. Serve hot with any dry curry.
