Ingredients

  • 1 kg - Pork
  • 25 gms - Green chillies
  • 1 - Large Onion
  • 1 Inch - Ginger
  • 6 Cloves - Garlic
  • 2 tbsp - Vinegar
  • 1 tsp - Salt to taste
  • 1 - Brinjal
  • To roast and grind:
  • 1 tbsp - Coriander
  • 10 - Kashmiri chillies
  • 5 - dry red chillies
  • 1 tsp - Jeera
  • 1 Inch - Turmeric
  • 6 - Pepper Corns
  • 1 small ball - Tamarind

How to Make Pork Curry the Pais Way

  • Wash the pork and cut it into medium pieces.
  • Roast the masala and grind with tamarind.
  • Mince the green chillies, ginger, garlic and onions into fine cubes.
  • Mix the meat with ground and minced masala and keep aside for an hour.
  • In a large vessel, fry the pork in a little oil. Fat will come out; continue frying in its own fat.
  • When the meat has browned a little, add sufficient hot water and cook it with vinegar and salt to taste.
  • Add one brinjal cut into small pieces, and cook with the meat till done.
