Ingredients

  • 500 g - Pork
  • 1 tbsp - Ginger Garlic paste
  • 1/2 tbsp - coriander powder
  • 1/2 tsp - chilli powder (or as per taste)
  • 1/4 tsp - Turmeric powder
  • 1/4 tsp - pepper powder
  • 1/2 tsp - Garam Masala powder
  • Salt - to taste
  • For stir frying:
  • 3 - medium onions, sliced
  • 2 sprigs - Curry leaves
  • 1/2 tbsp - coriander powder
  • 1/2 tsp - chilli powder
  • 1/4 tsp - pepper powder
  • 1 tsp - oil
  • How to Make Pork Ulathiyathu (Stir fried pork)- Kerala style:

    1. Mix the pork with ginger-garlic paste, coriander powder, chilli powder, turmeric powder, garam masala powder, pepper powder and salt. Mix well. Put in a pressure cooker and cook, till done.
    2. Heat oil in a pan. Add the curry leaves, 1/3 of the sliced onions and saute, for a minute.
    3. Add the masala powders and saute, for 2 minutes.
    4. Add the pork and mix well.
    5. Cook on low heat, till the oil separates.
    6. Add rest of the onions and cook on low heat, till the meat turns dark in colour. The more dark it turns, the better.
    7. Ideal with rice.
