Ingredients

  • 500 g - pork
  • 1 tbsp - ginger garlic paste
  • 1/2 tbsp - coriander powder
  • 1/2 tsp - chilli powder (or as per taste)
  • 1/4 tsp - turmeric powder
  • 1/4 tsp - pepper powder
  • 1/2 tsp - garam masala powder
  • Salt - to taste
  • For stir frying:
  • 3 - medium onions, sliced
  • 2 sprigs - curry leaves
  • 1/2 tbsp - coriander powder
  • 1/2 tsp - chilli powder
  • 1/4 tsp - pepper powder
  • 1 tsp - oil

How to Make Pork Ulathiyathu (Stir fried pork)- Kerala style

  • Mix the pork with ginger-garlic paste, coriander powder, chilli powder, turmeric powder, garam masala powder, pepper powder and salt. Mix well. Put in a pressure cooker and cook, till done.
  • Heat oil in a pan. Add the curry leaves, 1/3 of the sliced onions and saute, for a minute.
  • Add the masala powders and saute, for 2 minutes.
  • Add the pork and mix well.
  • Cook on low heat, till the oil separates.
  • Add rest of the onions and cook on low heat, till the meat turns dark in colour. The more dark it turns, the better.
  • Ideal with rice.
