How to Make Potato and Vegetable Saagu

  • Peel and cut the potato into 1 cm cubes.
  • Dice the carrot and beans.
  • Cut cauliflower into small pieces.
  • Combine all these and peas together.
  • Add turmeric powder, salt and some water. Cook till soft.
  • Dry roast all the ingredients from chillies to cinnamon and powder.
  • Grind coconut with ginger, garlic and coriander leaves to a smooth paste.
  • Mix the ground paste with the powdered ingredients.
  • Heat the oil and fry onion till light brown.
  • Add the prepared Masala and 1 cup of water. Simmer for 5 minutes.
  • Add the cooked vegetables and simmer for 5 more minutes (the consistency should be slightly thicker than Sambar).
  • Serve hot with Poori or Chapatti.
