Ingredients

  • 5-6 medium potatoes, boiled and cut into cubes of one inch.
  • 2 tbsp - oil.
  • 1 tbsp - til (sesame).
  • 1/2 tbsp each - coriander powder, chilli powder, fennel powder, dried Mango powder, cumin powder.
  • 4-5 - curry leaves.
  • 3 tbsp - fresh coriander, chopped.
  • 1 tsp - salt.

How to Make Potato masala

  • Heat oil in a thick-bottomed non-stick frying pan and add curry leaves in it. Fry for a minute on low fire.
  • Add all the ingredients (except coriander leaves) and the cut potatoes and mix it thoroughly, till all the potatoes are coated with the masala.
  • Keep on low fire and cook till potatoes look brown and roasted.
  • Add fresh coriander and mix it again.
