  • 5-6 medium potatoes, boiled and cut into cubes of one inch.
  • 2 tbsp - oil.
  • 1 tbsp - til (sesame).
  • 1/2 tbsp each - coriander powder, chilli powder, fennel powder, dried Mango powder, cumin powder.
  • 4-5 - curry leaves.
  • 3 tbsp - fresh coriander, chopped.
  • 1 tsp - salt.
  • How to Make Potato masala:

    1. Heat oil in a thick-bottomed non-stick frying pan and add curry leaves in it. Fry for a minute on low fire.
    2. Add all the ingredients (except coriander leaves) and the cut potatoes and mix it thoroughly, till all the potatoes are coated with the masala.
    3. Keep on low fire and cook till potatoes look brown and roasted.
    4. Add fresh coriander and mix it again.
