Ingredients

  • 1 - potato, diced.
  • 1 - stalk Mint leaves.
  • 1/2 - green chilli.
  • 1/2 - lemon, rind grated.
  • 1 tbsp - Cabbage finely chopped.
  • 2 to 3 - Broccoli florets, finely chopped.
  • 1 tbsp - carrot, finely chopped.
  • 1 tbsp - plain flour.
  • 1 tsp - butter.
  • pepper to taste.
  • Salt to taste.

How to Make Potato Mint Lemony Soup

  • Boil chopped potato in plenty of water.
  • When soft, drain it and save water.
  • Run potatoes, chilli, mint and flour in mixie.
  • Add 1/2 cup stock to make a smooth paste.
  • Heat butter and stir fry chopped veggies.
  • Add rind and 3 cups stock. Bring to a boil.
  • Add potato paste, stirring continuously.
  • Add salt and pepper as per taste.
  • Bring to a boil, simmer for 3-4 mins.
  • Serve hot, topped with fresh cream, if desired.
