Ingredients

  • 4 medium Potatoes
  • 1 Onion
  • 4 eggs
  • 1/2 cup - mayonnaise
  • 1 1/4 tsp - salt
  • a pinch of pepper

How to Make Potato Salad with Eggs

  • Cover potatoes with water in a saucepan with 1 tsp. of salt and cook until skins start to break and with a fork slips through easily.
  • Remove from heat, drain water, cover potatoes with cold water, drain again and set aside to cool.
  • Boil the eggs for 10 mins. and shell them. Mince the onions finely.
  • Peel the potatoes, cube them and cut them in a bowl.
  • Sprinkle with 1/4 tsp. salt and pepper.
  • Chop three of the hard boiled eggs thinly and garnish the salad with these egg slices before serving.
