Ingredients

  • Potatoes - 1/2 kg
  • Coconut - 1 medium sized
  • Green chillies - 8, slit
  • Onion - 1/2 cup, chopped
  • Ginger - 1 tsp, minced
  • Salt to taste
  • How to Make Potato Stew in Coconut Milk:

    1. Boil, peel and lightly crush the potatoes.
    2. Grate the coconut and extract 1 cup thick milk and 2 cups of thin milk.
    3. Combine green chillies, onion and ginger with thin milk.
    4. Heat until boiled, reduce the flame and simmer for 3-4 mins.
    5. Add potatoes and salt, simmer for 2 more mins.
    6. Add the thick coconut milk and just as it begins to boil, switch off the flame and serve.
