3 medium sized- boiled potatoes.
(hot small variety), minced.
4 tbsp- chopped coriander leaves.
1 inch piece- fresh ginger, crushed finely.
1 tsp- mustard seeds.
15 tsp- cumin seeds.
Salt to taste.
15 tbsp- cooking oil.
How to Make Potato Stuffing
Boil the potatoes in their skins till soft, remove the skins and mash very nicely with a fork. Set aside.
Heat the oil and add the mustard, cumin, ginger and green chillies.
When the mustard starts crackling (this should take about 2-4 mins), add the hing and chilli powder and fry for about 1/2 a minute.
Remove from heat, add the mashed potatoes, chopped coriander leaves and salt to taste.
Mix well and heat through.
Remove and transfer to a bowl.
This recipe yields about 2 cups of stuffing.
Use this stuffing for potato parathas, toasted potato sandwiches, bread pakodas, stuffed vegetables (bell peppers, tomatoes, etc) and potato bondas.
On its own, it makes a yummy bhaji that goes very well with puris.
