  • 3 medium sized- boiled potatoes.
  • 10 green chillies (hot small variety), minced.
  • 4 tbsp- chopped coriander leaves.
  • 1 inch piece- fresh ginger, crushed finely.
  • 1 tsp- mustard seeds.
  • 15 tsp- cumin seeds.
  • 1/2 tsp- hing (asafoetida).
  • 1 tsp- red chilli powder.
  • Salt to taste.
  • 15 tbsp- cooking oil.

How to Make Potato Stuffing

  • Boil the potatoes in their skins till soft, remove the skins and mash very nicely with a fork. Set aside.
  • Heat the oil and add the mustard, cumin, ginger and green chillies.
  • When the mustard starts crackling (this should take about 2-4 mins), add the hing and chilli powder and fry for about 1/2 a minute.
  • Remove from heat, add the mashed potatoes, chopped coriander leaves and salt to taste.
  • Mix well and heat through.
  • Remove and transfer to a bowl.
  • This recipe yields about 2 cups of stuffing.
  • Use this stuffing for potato parathas, toasted potato sandwiches, bread pakodas, stuffed vegetables (bell peppers, tomatoes, etc) and potato bondas.
  • On its own, it makes a yummy bhaji that goes very well with puris.
