Ingredients

  • Medium sized Red Potatoes - 4.
  • Ginger paste - 1 tsp.
  • Garlic paste - 1 tsp.
  • Red Chilli powder - 1/2 tsp.
  • Paprika - 1 tsp.
  • Tamarind - 1/4 tsp.
  • Turmeric - 1/2 tsp.
  • Cumin powder - 1/2 tsp.
  • Salt to taste.
  • Curry leaves - 5.
  • Mustard Seeds - 1 tsp.
  • Urad Dal - 1/2 tsp.
  • oil - 3 tbsp.
  • How to Make Potato Veg:

    1. Cut the potato into small cubes and mix with all ingredient (except mustard seeds, curry leaves and urad dal) and set aside for 15 mins.
    2. Heat 1 tbsp oil in a non stick stir pan and add the mustard seeds.
    3. Once it pops, add curry leaves and urad dal and fry lightly.
    4. Now add the prepared potatoes and stir it.
    5. Now close the lid and cook on a medium flame for 5-7 mins.
    6. Once the potatoes are half done, remove the lid and cook it well, adding oil in between till the potatoes have turned dark brown and are crispy.
