Ingredients

  • 2 tbsp - Oil
  • 1 onion, chopped
  • 2 cups - mushrooms, chopped
  • 1 carrot, grated
  • Salt and pepper to taste
  • 1 tbsp - chopped Parsley
  • 2 tbsp - Currants
  • 1/2-3/4 cup - feta cheese, crumbled
  • 1/4 cup - pine nuts, lightly toasted
  • 2 Garlic cloves, crushed with a pinch of salt and mixed with 1 tbsp. softened Butter
  • 2 tbsp - freshly grated parmesan cheese
  • 4 large potatoes, boiled in salt water and peeled
  • How to Make Potatoes with mushroom stuffing:

    1. Heat 2 tbsp. oil.
    2. Saute onions and mushrooms together until mushrooms are well browned.
    3. Add carrots and saute for a few mins.
    4. Add salt and pepper to taste.
    5. Remove from fire and keep aside.
    6. Scoop out the centres of the potatoes leaving a half-inch thick shell/casing.
    7. In a bowl, mix the scooped out potato pulp with the sauteed mushrooms and onion mixture, carrots, parsley, currants, feta cheese and pine nuts.
    8. Brush the potatoes (inside and outside) with butter.
    9. Place a small knob of butter in each potato.
    10. Fill each potato with the mushroom, feta mixture.
    11. Sprinkle the parmesan cheese over it.
    12. Place the potatoes on a greased baking tray.
    13. Bake until topping has browned.
    14. Serve with salsa of your choice.
