  • 2 tbsp - Oil
  • 1 onion, chopped
  • 2 cups - mushrooms, chopped
  • 1 carrot, grated
  • Salt and pepper to taste
  • 1 tbsp - chopped parsley
  • 2 tbsp - currants
  • 1/2-3/4 cup - feta cheese, crumbled
  • 1/4 cup - pine nuts, lightly toasted
  • 2 garlic cloves, crushed with a pinch of salt and mixed with 1 tbsp. softened butter
  • 2 tbsp - freshly grated parmesan cheese
  • 4 large potatoes, boiled in salt water and peeled

How to Make Potatoes with mushroom stuffing

  • Heat 2 tbsp. oil.
  • Saute onions and mushrooms together until mushrooms are well browned.
  • Add carrots and saute for a few mins.
  • Add salt and pepper to taste.
  • Remove from fire and keep aside.
  • Scoop out the centres of the potatoes leaving a half-inch thick shell/casing.
  • In a bowl, mix the scooped out potato pulp with the sauteed mushrooms and onion mixture, carrots, parsley, currants, feta cheese and pine nuts.
  • Brush the potatoes (inside and outside) with butter.
  • Place a small knob of butter in each potato.
  • Fill each potato with the mushroom, feta mixture.
  • Sprinkle the parmesan cheese over it.
  • Place the potatoes on a greased baking tray.
  • Bake until topping has browned.
  • Serve with salsa of your choice.
