Ingredients

  • 1/2 lb - butter.
  • 1/2 lb - sugar.
  • 9 oz - flour.
  • 4 - large egg.
  • 1 - lemon, grated.
  • 1/4 tsp - baking powder.
  • 1/2 lb - sultanas.
  • 1/2 lb - currants.
  • 2 oz - red cherries.
  • 2 oz - chopped almonds.
  • 2 tbsp - Irish whiskey.
  • How to Make Pound Cake:

    1. Cream the butter and sugar together until well blended.
    2. Mix in 1 egg and the lemon rind. Mix well. Then add the remaining eggs and mix well again.
    3. Sieve the flour and baking powder together, and add into the butter-sugar mixture. Mix well.
    4. Fold in all the fruits and transfer the mix into a cake tin, coated in butter.
    5. Garnish the top with the chopped almonds.
    6. Bake for 2.5 hours in moderate oven heat.
    7. When cooked (the cake will begin to separate from the side of the tin) remove from oven and coat the top with the whiskey.
    8. Leave to cool completely before serving.
