Ingredients

  • 2 kg - jumbo Prawns
  • 100 g - onion, sliced thinly
  • 50 g - capsicum, julienned
  • 50 g - Tomato
  • 5 Cloves - garlic, peeled and crushed
  • 3" ginger, peeled and shredded
  • 1 sprig Curry leaves
  • 1 piece Lemon grass, sliced
  • 8 Cloves
  • 10 Cardamoms
  • 2 tsp - chilli powder
  • 1 tbsp - Lime juice
  • 3 tbsp - Sugar
  • 2 tbsp - Corn oil
  • 1.5 cups - water
  • salt to taste
  • How to Make Prawn and Chillies in Spicy Lime Sugar:

    1. Wash and clean the prawns.
    2. Peel and devein them but leave the tail tips on.
    3. Marinate them with salt, ginger, garlic, lime juice and oil for 15 minutes.
    4. Saute them for 5 minutes with curry leaves, lemon grass, cloves and cardamoms and let all cook on low fire for 5 minutes.
    5. Chop 50 g of tomatoes and put in a saucepan, add chilli powder, sugar and half cup of water and make a sauce.
    6. Pour over prawns and stir.
    7. Add the capsicum and onion to the prawns and cook for 2 minutes and take out.
    8. Serve with rice.
