Ingredients

  • 1 kg - king Prawns (peeled and deveined).
  • 1.5cup - Lemon juice.
  • 400 g - whole tomatoes, peeled.
  • 1.5 cup - Coconut milk.
  • 1.5 cup - chopped coriander leaves.
  • 2 cubes - Maggi Chicken cubes.
  • 3 tbsp - oil.
  • 1 - onion, chopped.
  • 1 Clove - garlic, crushed.
  • 2 tsp - hot chilli sauce.
  • 3 extra tbsp - oil.
  • 1.5 tsp - salt.
  • 1.5tsp - cracked black pepper.

How to Make Prawns in Coconut Sauce

  • Sprinkle prawns with lemon juice and stand for 1 hour. Drain off juice and reserve.
  • Heat oil in pan, add onions and cook for 7 mins.
  • Add garlic and cook for a further 2 mins.
  • Add undrained tomatoes, Maggi chicken stock cubes, hot chilli sauce and reserved lemon juice, then cook for 5 mins.
  • Stir in the coconut milk and return to the boil.
  • Heat extra oil in a separate pan, add prawns, salt, pepper and cook for 3-5 mins.
  • Pour sauce into a warm serving dish, add prawns and sprinkle with coriander leaves.
