Ingredients

  • 350 g - Prawns with tail.
  • 60 ml - vegetable oil.
  • 80 g - onions.
  • 10 g - garlic.
  • 100 ml - Tamarind pulp.
  • 30 g - Lemon grass.
  • 10 g - fresh Turmeric root.
  • 5 sprigs - curry leaves.
  • 2g - aniseed.
  • 10g - red chillies.
  • 1 - cinnamon.
  • 3g - cumin.
  • 100g - tomatoes.
  • Salt and pepper to taste|

How to Make Prawns Udang Goreng (Assam)

  • Clean the prawns, marinate in red chilli powder, salt, 1/2 the tamarind pulp, cumin seeds and corn flour for half an hour.
  • Deep fry in hot oil, taking care not to overcook the prawns. Keep aside.
  • Method for sauce:
  • Fry chopped onions in oil with chopped garlic and saute well.
  • Add curry leaves, crushed lemon grass stalk, aniseed, cinnamon, chopped fresh long red chilli and tomatoes.
  • Cook well till the sauce has a coarse consistency. Season with salt and pepper and garnish with coriander sprigs.
