Ingredients

  • 10 - prunes (dried plums), chopped and pitted
  • 1/2 cup - rolled oats (dry-roasted)
  • 1 cup + 2 tbsp - whole wheat flour
  • 1 tbsp - honey
  • 1 tsp - ghee
  • 2 - eggs
  • 1 tsp - baking powder
  • 1/4 tsp - baking soda
  • a pinch of salt
  • 1/2 cup - butter
  • 1/2 cup - granulated sugar
  • 2 tbsp - brown sugar
  • 1.5 tsp - vanilla essence

How to Make Prunes & Oats Loaf Cake

  • Dry-roast the oats for 5 minutes on low flame and keep aside.
  • Sieve the whole wheat flour, baking powder, baking soda and salt together in a bowl.
  • Take another bowl, add the butter and sugar and mix well with a hand mixer until fluffy.
  • Add the eggs and mix for about 3 minutes.
  • Add vanilla essence and mix for about 2 minutes with a hand mixer.
  • Add honey and ghee and mix.
  • Gently pour the dry flour mixture into this bowl.
  • Use a spatula to gently mix the ingredients.
  • Add the chopped prunes and roasted oats.
  • Mix well with a wooden spatula.
  • Grease a cake tin and dust flour over it.
  • Pour the mixture into the tin evenly.
  • Bake in a preheated oven for 35 minutes at 170 degrees Celsius.
  • If not done fully, bake for another 5 minutes. Check by inserting a knife at the centre of the cake. If the knife comes out clean, the cake is done.
  • Move to a wire rack to cool for 10 minutes.
  • Serve with tea or an anytime snack.
