Ingredients

  • 10 - Prunes (dried plums), chopped and pitted
  • 1/2 cup - rolled oats (dry-roasted)
  • 1 cup + 2 tbsp - whole Wheat flour
  • 1 tbsp - Honey
  • 1 tsp - Ghee
  • 2 - eggs
  • 1 tsp - baking powder
  • 1/4 tsp - baking soda
  • a pinch of salt
  • 1/2 cup - Butter
  • 1/2 cup - granulated Sugar
  • 2 tbsp - Brown sugar
  • 1.5 tsp - vanilla essence
  • How to Make Prunes & Oats Loaf Cake:

    1. Dry-roast the oats for 5 minutes on low flame and keep aside.
    2. Sieve the whole wheat flour, baking powder, baking soda and salt together in a bowl.
    3. Take another bowl, add the butter and sugar and mix well with a hand mixer until fluffy.
    4. Add the eggs and mix for about 3 minutes.
    5. Add vanilla essence and mix for about 2 minutes with a hand mixer.
    6. Add honey and ghee and mix.
    7. Gently pour the dry flour mixture into this bowl.
    8. Use a spatula to gently mix the ingredients.
    9. Add the chopped prunes and roasted oats.
    10. Mix well with a wooden spatula.
    11. Grease a cake tin and dust flour over it.
    12. Pour the mixture into the tin evenly.
    13. Bake in a preheated oven for 35 minutes at 170 degrees Celsius.
    14. If not done fully, bake for another 5 minutes. Check by inserting a knife at the centre of the cake. If the knife comes out clean, the cake is done.
    15. Move to a wire rack to cool for 10 minutes.
    16. Serve with tea or an anytime snack.
