Ingredients

  • 15 slices - bread (edges cut off)
  • 5 slices - cheese singles
  • 5 tbsp - ketchup or 1 large tomato sliced into 10 pieces
  • 1 - cucumber slice
  • 1 - large potato
  • 15 tbsp - butter
  • 1/4 tsp - pepper
  • For the chutney:
  • 1 bunch - coriander leaves
  • 1/2 bunch - mint leaves
  • 5 tbsp - desiccated coconut
  • 5 tbsp - butter
  • 1 to 2 - green chillies
  • 5 - peppercorns
  • 5 tbsp - sugar
  • Salt to taste
  • 1/4 tsp - cumin seeds or powder
  • 1 pinch - cardamom or cinnamon powder

How to Make Pudina Chutney Sandwich

  • Grind all chutney ingredients in a blender, adding water little by little till you get a smooth paste (ensure butter is at room temperature or slightly heat it in the microwave).
  • Boil the potato in water with 1/2 tsp salt and cut into medium slices (not too thin). Dust with the pepper and set aside.
  • Make sandwiches with ingredients in this order: bread slice - butter - cheese - potato slices - ketchup or tomato slice or both - butter - bread slice - chutney - cucumber slices - butter - bread slice.
  • Cut diagonally into a triangle.
  • Serve with ketchup.
