Ingredients

  • 2 tbsp - rice
  • 2 tbsp - white sesame seeds
  • 3 tsp - fenugreek
  • Tamarind - size of orange
  • Jaggery - size of orange
  • 2 tbsp - chilli powder
  • 2 tsp - asafoetida
  • 3 tsp - turmeric powder
  • 4 tbsp - oil
  • 2 tbsp - mustard
  • 300 g - minced ginger
  • 6 - green chillies, cut in thin slices
  • 1/2 tsp - salt

How to Make Pulinji

  • Roast rice, sesame seeds and fenugreek without oil. Cool and powder.
  • Soak tamarind in 1.5 cup of water and extract the pulp.
  • Dissolve jaggery in little water and strain.
  • Mix it with tamarind juice, chilli powder, turmeric and salt.
  • Simmer till thick.
  • Add the prepared powder and simmer for 2 more minutes.
  • Heat oil, season with mustard. Add ginger and green chillies. Fry for 1 minute and to the tamarind mixture.
