Ingredients

  • 2 tbsp - Rice
  • 2 tbsp - white sesame seeds
  • 3 tsp - Fenugreek
  • Tamarind - size of Orange
  • Jaggery - size of Orange
  • 2 tbsp - chilli powder
  • 2 tsp - Asafoetida
  • 3 tsp - Turmeric powder
  • 4 tbsp - oil
  • 2 tbsp - mustard
  • 300 g - minced Ginger
  • 6 - green chillies, cut in thin slices
  • 1/2 tsp - salt
  • How to Make Pulinji:

    1. Roast rice, sesame seeds and fenugreek without oil. Cool and powder.
    2. Soak tamarind in 1.5 cup of water and extract the pulp.
    3. Dissolve jaggery in little water and strain.
    4. Mix it with tamarind juice, chilli powder, turmeric and salt.
    5. Simmer till thick.
    6. Add the prepared powder and simmer for 2 more minutes.
    7. Heat oil, season with mustard. Add ginger and green chillies. Fry for 1 minute and to the tamarind mixture.
