Ingredients

  • 2 cups - yellow or red pumpkin, peeled and cubed
  • 1.5 litre - water or vegetable stock
  • 200 ml - Coconut Milk
  • 1 cup - onion, chopped
  • 1/2 cup - short macaroni
  • 1 tbsp - vegetable or Peanut oil
  • 2 tsp - garlic, minced
  • 1 tsp - cumin powder
  • 1/2 tsp - chilli powder
  • Coriander leaves to garnish
  • salt to taste

How to Make Pumpkin and Macaroni Soup

  • Cook macaroni in salted boiling water. Drain and reserve.
  • Heat the oil and fry onion and garlic till fragrant.
  • Add cumin and chilli powder. Fry for few seconds.
  • Add the pumpkin and water or stock.
  • Simmer till the pumpkin is cooked.
