  • 1/2 kg- Pumpkin,
  • 2 - Onions, chopped finely
  • A few Curry leaves
  • 1 tsp - Ginger and Garlic paste
  • 2 tsp - Chilly powder
  • 1 tsp - Coriander powder
  • 2 - Medium sized tomatoes, chopped
  • 2 tbsp - Oil
  • Salt to taste.
  • How to Make Pumpkin And Tomato Curry:

    1. Remove the skin of the pumpkin and cut into 2 inch pieces.
    2. Wash and soak in a little water.
    3. Heat oil in a pan and saute the curry leaves and onions until golden brown.
    4. Then add the tomatoes, chilly powder, salt, turmeric powder, coriander powder and ginger garlic paste and saute for a 3-4 mins.
    5. Now add the pumpkin and mix well.
    6. Add 1 cup of water and cook on low heat until the pumpkin is tender.
    7. Serve as a main curry or a side dish with rice.
