  • 2 cups grated Pumpkin (remove the skin and seeds)
  • 2 cups - all - purpose flour
  • 1.25 cups - Sunflower oil
  • 2 full cups - Sugar
  • 1tsp - Baking soda
  • 1 tsp - Salt
  • 1 tsp - Cinnamon powder
  • 4 - eggs
  • Few Almonds or cashew (finely chopped)
  • 2 to 3 drops - Vanilla essence
  • How to Make Pumpkin Cake:

    1. Steam the grated pumpkin for about 5 minutes. Then let it cool.
    2. Beat the eggs well and add sugar to it. Beat for another 3 minutes.
    3. Sieve flour with the baking soda, cinnamon powder and salt.
    4. Now slowly add the flour to the egg mixture and mix well.
    5. Add the grated pumpkin and oil also. Mix everything well.
    6. Add the almonds and vanilla essence.
    7. In the meantime, preheat the oven to 250 degrees F.
    8. Grease the baking tray with a little butter and dust it with a little flour.
    9. Now add the mixture and bake for about 25 minutes or till done.
    10. You can check it by piercing the centre of the cake with a knife. If it comes out clean, the cake is done.
