Ingredients

  • 250 g - Pumpkin pieces
  • 1 tbsp - Oil
  • 1 tsp - Ginger chopped
  • 6 Cloves - Garlic, chopped
  • 1 tsp - Red Chilli powder
  • 1/4 tsp - Turmeric powder
  • 2 tbsp - Kasoori Methi ( dried Fenugreek leaves )
  • 2 tbsp - Tomatoes, chopped
  • 1/2 cup - water
  • 3/4 tsp - salt ( or to taste )
  • 2 pinches - Jeera powder
  • 2 pinches - Pepper powder
  • How to Make Pumpkin Ki Subzi with Kasoori Methi:

    1. Heat oil in a wide pan. Fry chopped ginger and garlic till light brown.
    2. Add pumpkin pieces and saute well.
    3. Add red chilli powder and turmeric powder. Stir well for 2 - 3 minutes.
    4. Add crushed kasoori methi leaves and chopped tomatoes. Saute for 2 - 3 minutes.
    5. Add 1/2 cup water and salt to taste. Cover with a lid and cook on a low heat for 20 minutes or till done and water almost dries up.
    6. Sprinkle jeera powder and pepper powder.
    7. Serve as a side with rotis or rice.
