Ingredients

  • 1 small Pumpkin
  • 1/4 cup - green beans, without skin
  • 2 cups - water
  • 3 tbsp - cooking oil
  • 1/2 tsp - Mustard Seeds
  • 1/4 tsp - Turmeric powder
  • 1 - onion, medium sized, diced
  • 2 - green chillies, chopped
  • 5 - Cloves garlic, chopped
  • 2 - tomatoes, diced
  • 1 tbsp - curry masala
  • 1 cup - Coconut Milk
  • 2 stalks - Curry leaves
  • salt to taste

How to Make Pumpkin Kuthu

  • Remove rind and seeds of pumpkin.
  • Wash and cut into 3 centimetre cubes.
  • Boil green beans in water for 5 minutes.
  • Add pumpkin cubes and bring to boil for a further 5 minutes.
  • Heat oil in a pan, fry mustard seeds, turmeric, onions, chillies, garlic, tomatoes and curry masala till fragrant.
  • Add boiled pumpkin and green beans together with water.
  • Stir fry for a few seconds.
  • Add coconut milk and salt to taste.
  • Add curry leaves.
  • Stir well and serve.
