Ingredients

  • 2 and 2/3 cup - Maida (all - purpose flour, sift before measuring)
  • 1.5 cups - powdered Sugar
  • 1 cup - pumpkin, steamed and mashed
  • 1/2 cup - cashew nuts, chopped
  • 1/2 cup - Butter
  • 3 - eggs
  • 3 tsp - baking powder
  • 1 tsp - salt
  • 1 tsp - mixed spice powder (cinnamon, cloves, nutmeg)
  • How to Make Pumpkin Nut Cake:

    1. Mix maida with baking powder, salt and mixed spice powder.
    2. Beat butter with sugar till the mixture is light.
    3. Add the eggs, one at a time, beating well after each addition.
    4. Mix in the pumpkin and nuts.
    5. Fold in the maida.
    6. Pour the mixture in a greased 8-ich round cake tin.
    7. Bake in a moderate oven (180C) till the cake is done (about 40 minutes)
    8. Turn out on a wire rack and cool completely before cutting.
