Ingredients

  • 1,200 gm - yellow Pumpkin
  • 1,200 gm - white pumpkin
  • 1 sprig dill leaves (finely chopped)
  • 1/2 cup - Cream
  • 1 tsp - Sugar
  • 1/2 tsp - pepper (freshly milled)
  • salt to taste
  • 1/2 tsp - Butter
  • Dill or Mint to garnish
  • How to Make Pumpkin Soup:

    1. Peel and chop the pumpkins.
    2. Pressure cook with 1 cup water till soft.
    3. Blend with an electric hand blender.
    4. Pass through a sieve, then add 1 cup water.
    5. Put in a deep vessel, bring to a boil.
    6. Simmer for 2-3 minutes, reduce heat.
    7. Add salt, pepper, butter, sugar and dill leaves.
    8. Stir and remove from fire.
    9. Add half of the fresh cream, stir till well blended.
    10. Add a swirl of cream to individual serving bowls, after pouring hot soup.
    11. Garnish with a little bit of dill or mint leaves.
    12. Serve hot.
