Ingredients

  • ribbon noodles - 150 gm
  • Onion - 1/2 cup, chopped
  • Ginger 2 cm
  • Garlic - 8 flakes
  • chilli powder - one and a half tsp
  • beans sprouts - 1/2 cup
  • Spinach leaves a handful
  • cooked minced Meat - 1/2 cup
  • oil - 2 tbsp
  • soya sauce - 2 tsp
  • Tomato sauce - 4 tbsp
  • msg - 1/4 tsp
  • Meat stock - 2 to 3 tbsp
  • oriental sesame oil - 1 tsp
  • eggs 2, scrambled
  • salt to taste
  • How to Make Quay Theow:

    1. Cook noodles in plenty of boiling water, to which 1 tsp salt is added.
    2. Drain, toss in a tsp of oil and keep aside.
    3. Grind onion, ginger and garlic together to a paste.
    4. Chop spinach roughly.
    5. Heat oil in a fry pan (preferably non-stick and large enough to toss the noodles easily).
    6. Add the ground paste and fry well.
    7. Add chilli powder and fry for 1/2 minute.
    8. Add beans sprout and a pinch of salt.
    9. Stir-fry for 1 minute.
    10. Add spinach, cook till just soft.
    11. Add the meat and noodles.
    12. Add soya sauce, tomato sauce, sat and MSG.
    13. Mix well. Add sesame oil and stock.
    14. Toss the noodles till they are very hot and just moist (not soggy). Mix in the scrambled eggs and serve immediately.
    15. The water in which minced meat was cooked.
