Ingredients

  • ribbon noodles - 150 gm
  • onion - 1/2 cup, chopped
  • ginger 2 cm
  • garlic - 8 flakes
  • chilli powder - one and a half tsp
  • beans sprouts - 1/2 cup
  • spinach leaves a handful
  • cooked minced meat - 1/2 cup
  • oil - 2 tbsp
  • soya sauce - 2 tsp
  • tomato sauce - 4 tbsp
  • msg - 1/4 tsp
  • meat stock - 2 to 3 tbsp
  • oriental sesame oil - 1 tsp
  • eggs 2, scrambled
  • salt to taste

How to Make Quay Theow

  • Cook noodles in plenty of boiling water, to which 1 tsp salt is added.
  • Drain, toss in a tsp of oil and keep aside.
  • Grind onion, ginger and garlic together to a paste.
  • Chop spinach roughly.
  • Heat oil in a fry pan (preferably non-stick and large enough to toss the noodles easily).
  • Add the ground paste and fry well.
  • Add chilli powder and fry for 1/2 minute.
  • Add beans sprout and a pinch of salt.
  • Stir-fry for 1 minute.
  • Add spinach, cook till just soft.
  • Add the meat and noodles.
  • Add soya sauce, tomato sauce, sat and MSG.
  • Mix well. Add sesame oil and stock.
  • Toss the noodles till they are very hot and just moist (not soggy). Mix in the scrambled eggs and serve immediately.
