Ingredients

  • 10-15 - button mushroom
  • 1 - onion
  • 1/2 - small capsicum
  • Butter/olive oil
  • Salt
  • Pepper

How to Make Quck n Easy Mushroom Soup

  • Wash and chop the mushrooms, onion and capsicum. Heat butter/olive oil in a pan.
  • Add the chopped onions, fry them until they turn translucent.
  • Add the mushrooms and capsicum, saute it well.
  • Add 2 cups of water, close the pan and allow it to cook.
  • When the mushrooms get cooked, turn off the flame and allow it to cool.
  • Strain the water, grind them in the blender and filter using the same water we have strained.
  • Add this filtered puree in the pan, along with salt and stir it gently.
  • When it starts to boil, turn off the flame.
  • Sprinkle some pepper and serve it hot.
  • You can chop two mushrooms finely, saute them in butter and finally add them in soup while serving.
