Ingredients

  • 1 - medium onion, chopped fine
  • 1-2 - tomatoes, chopped
  • 1 - small capsicum, chopped
  • 2 cups - all - purpose flour
  • 1 cup - cheese
  • 1/2 tsp - salt
  • 1 tbsp - baking powder
  • 1 tsp - dried Italian herbs
  • 1 -2 tbsp - Olive oil
  • 1 - egg, beaten
  • 1 cup - water
  • How to Make Quick Breads:

    1. Preheat oven to 200 C.
    2. Grease a 12 cup muffin tray.
    3. Finely chop the onions, tomatoes and capsicum.
    4. Fry onion and capsicum till they are a bit soft.
    5. Take off the heat, add tomatoes, salt and herbs.
    6. Mix flour, baking powder and whisk.
    7. Add the cheese, vegetables, egg and one cup of water. Mix everything until just combined.
    8. Spoon into the muffin pan and bake for about 25 minutes or until a skewer comes out clean.
    9. Serve with pizza sauce or ketchup.
