Ingredients

  • 1 - medium onion, chopped fine
  • 1-2 - tomatoes, chopped
  • 1 - small capsicum, chopped
  • 2 cups - all - purpose flour
  • 1 cup - cheese
  • 1/2 tsp - salt
  • 1 tbsp - baking powder
  • 1 tsp - dried Italian herbs
  • 1 -2 tbsp - olive oil
  • 1 - egg, beaten
  • 1 cup - water

How to Make Quick Breads

  • Preheat oven to 200 C.
  • Grease a 12 cup muffin tray.
  • Finely chop the onions, tomatoes and capsicum.
  • Fry onion and capsicum till they are a bit soft.
  • Take off the heat, add tomatoes, salt and herbs.
  • Mix flour, baking powder and whisk.
  • Add the cheese, vegetables, egg and one cup of water. Mix everything until just combined.
  • Spoon into the muffin pan and bake for about 25 minutes or until a skewer comes out clean.
  • Serve with pizza sauce or ketchup.
