  • 1 cup - Coconut
  • 1 cup - raw Rice
  • 5 - Green chillies
  • 1 tsp - mustard
  • 1 tbsp - Bengal Gram
  • 1 tbsp - black gram
  • Coriander leaves
  • Curry leaves
  • Salt to taste
  • Oil for frying
  • How to Make Quick Coconut Rice:

    1. Wash and keep rice in pressure cooker.
    2. One cup of rice needs 2 cups of water if kept in pressure cooker and 4 cups in microwave oven.
    3. Add a pinch of salt to rice so that it will come out well.
    4. Heat oil in a pan, add mustard and after it splutters, add Bengal gram, black gram, green chillies, curry leaves, a little salt and finally grated/shredded coconut. Mix well.
    5. Add the fried contents to the boiled rice.
    6. Rice should be spread in a plate or bowl to cool before adding the fried contents.
    7. Decorate with coriander leaves.
