  • 4 long- Eggplants
  • 1.5 " - Ginger
  • 2-3 flakes - Garlic
  • 1/2 tsp- Turmeric powder
  • 1 tsp- Coriander powder
  • 1 tsp- Mustard Seeds
  • 1.5 tsp- Amchur
  • 2-3 tsp - Olive oil
  • Salt and chilli powder - to taste
  • How to Make Quick Eggplant Dish:

    1. Cut each eggplant length- wise into 3" long pieces.
    2. Heat the olive oil and splutter the mustard seeds. Now add the grated ginger and finely chopped garlic.
    3. Saute for 2-3 minutes until brown. Add the coriander and turmeric powder.
    4. Then add the eggplant, salt and chilli powder. Mix and cover the eggplant with the masala.
    5. Cover and cook until the eggplant softens. Add more oil in case it dries up.
    6. Now add the amchur powder and mix well. To keep it crunchy, remove the lid and let it dry up.
    7. Garnish with chopped cilantro.
    8. Serve hot.
