Ingredients

  • 1 medium sized Brinjal
  • 1/2 tsp - coriander - cumin powder
  • 1/2 tsp -red chilli powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - amchur
  • Salt to taste
  • Rice flour - 1/2 bowl
  • Oil for shallow frying

How to Make Quick Fried Brinjal

  • Cut the brinjal into round slices and soak it in water.
  • Drain the water completely and apply chilli powder, coriander-cumin powder, turmeric powder and salt to it.
  • Heat a non-stick frying pan and pour oil enough for shallow frying.
  • Dip the brinjal slices in rice flour and fry them in the pan till crisp on both sides.
  • Sprinkle amchur powder and serve hot with dal and rice.
