Ingredients

  • 300 g - flour
  • 120 g - butter
  • 2 cups - milk
  • 3 cups - castor sugar
  • 12 tsp - condensed milk
  • 6 bananas
  • 2 oranges
  • 2 - apples
  • 10 g - pistachios
  • 2 tsp - vanilla essence
  • 2 tsp - strawberry essence
  • 1/2 tsp - red colour
  • 1/2 tsp - yellow colour
  • 2 tsp - baking powder
  • 1/2 tsp - soda bi-carbonate
  • a pinch salt

How to Make Quick Fruit Pudding

  • Combine together melted butter, milk, condensed milk, vanilla essence and yellow colour. Beat well.
  • Sieve flour, soda bi-carb, baking powder, salt and add to the beaten mixture.
  • Grease and dust a baking tin and pour batter into it.
  • Bake at 180 C or until an inserted skewer comes out clean.
  • Cool it for 5 mins. before turning out onto a wire rack for further cooling.
  • Cut into half horizontally. Remove top layer.
  • Whip cream, castor sugar, strawberry essence and red food colour until thick.
  • Spread cream on the bottom layer.
  • Add chopped fruit then the cream and finally place back the top layer.
  • Decorate the top of the pudding with cream and chopped pistachios.
  • Leave for 20 mins to set before serving.
