  • Raw rice - 2 cups
  • Turmeric powder - 1/2 tsp
  • Oil - 1/4 cup
  • Mustard seeds - 1/2 tsp
  • Bengal gram - 3/4 tbsp
  • Urad dal - 3/4 tsp
  • Curry leaves - a few
  • Dried red chilli - 6-8
  • Lemon - 1
  • Salt to taste.

How to Make Quick Lemon Rice

  • Cook the rice in a bowl until tender.
  • Add salt to it and let it cool.
  • Fluff the rice gently with a fork to separate the grains.
  • In a small bowl, add turmeric, salt, lemon juice, a little asafetida and mix well.
  • Pour this on the rice and keep aside.
  • Heat oil in a kadai and splutter the mustard seeds.
  • Then add the bengal gram and urad dal.
  • Fry till golden brown.
  • Add the curry leaves and red chillies.
  • Stir well.
  • Pour this over the rice.
  • Mix well and serve hot.
