How to Make Quick 'n' Easy Egg Curry

  • Heat oil in a pan.
  • Fry the chopped onions until golden brown.
  • Add ginger-garlic paste and stir for a while.
  • Add the chopped tomato and stir-fry until soft.
  • Add garam masala and red chilli powder and mix well.
  • Add the potatoes and stir lightly.
  • Add 2-4 cups of water and let the potato pieces boil.
  • When the potatoes are done, add 1 more cup of water and the boiled eggs one by one.
  • Add salt, stir lightly and mix well.
  • Leave the curry to simmer for 2 mins so that the eggs absorb the spices.
  • Add 1 or 2 tsp of lemon juice and mix well.
  • Garnish with fresh coriander leaves.
